We lovingly refer to this popcorn recipe as Crack Corn. We can't help but inhale it when we make it... This becomes our late night savory snack at least a couple times a week.
After reading The Beauty Detox Solution and learning about how terrible cheese is for us, we've been integrating nutritional yeast into more of our recipes to get a similar flavor. It's perfect in salad dressings, and a more recent and addictive discovery is that it's also amazing on popcorn. Since this discovery we just can't stop eating it. Combined with some truffle oil and a little Celtic sea salt we are all totally done for. Luckily, it's actually pretty healthy! We don't want to include a ton of oil in our diets, but this is the perfect treat.
WHAT YOU NEED
- 1/3 cup organic popcorn seeds
- 2 TBS Truffle oil (experiment with more or less depending on your taste)
- 1 1/2 TBS Nutritional yeast (again more or less could work depending on your taste)
- 1 tsp Celtic Sea Salt
- 2 TBS Coconut Oil
HOW TO MAKE IT
Using a large 6 to 8qt stock pot, heat up the Coconut oil on Medium-High heat. Add the popcorn seeds and cover. Once the popcorn seeds start to pop, start shaking the pot back and forth. As soon as the popping stops, turn the stove off and remove the lid. Stir it again to make sure that the popcorn at the bottom of the pot isn't burning.
Drizzle half of the truffle oil over the popcorn and then stir. Add the rest, and stir again! Do the same with the sea salt, and nutritional yeast. Finally, fill up a giant bowl of crack corn and park yourself in front of a good movie. Enjoy!
